My favorite brownie recipe

This is my go-to brownie recipe.  It is fudgy, dense, and full of chocolate.  This is not a cake-like brownie.  Not everyone loves this brownie recipe, but some people are weird.  I love this recipe, it is simple and delicious, so I will continue to make the brownies and if you don't like them, that is your problem and then my problem when jeans don't fit because I ate all the brownies that you didn't like!  These brownies are so easy!  Everything is mixed together in one saucepan, only one bowl to clean!!!

I came home one Friday night after a rowdy "data meeting" with some co-workers and Ruth said, "make me some brownies, now!"  Ruth is scary and mean, so I said, "I have mint chocolate chips in the freezer, I can make MMMMM brownies."  Ruth laughed and mocked the "MMMMM."  I then asked if she trusted me to make brownies in my inebriated state, and she said she was confident I could still make brownies.  And guess what - I can!

I found this recipe years ago on All Recipes before I started reading food blogs.  No matter what, I keep making these brownies. They are easily adaptable to whatever chocolate you have on hand.  I also like these brownies because I consider them "healthy" - there is only 2 tablespoons of butter in the recipe!  For this case I used Nestle Toll House Dark Chocolate and Mint Chips.  I found a bag of these at Target in the clearance section, fools!  I should have bought 12 bags, they were like a $1.50 each and they are so delicious!!!

MMMMM Brownies aka My favorite brownie recipe adapated from All recipes Yield - 8” x 8” pan, 9-16 pieces depending on how you’re feeling that day

1/2 cup sugar 2 tablespoons butter 2 tablespoons water 1 teaspoon instant coffee 1 1/2 cups chocolate chips + 1/2 cup or whatever is left in the bag 2 eggs 1/2 teaspoon vanilla 2/3 cup flour 1/4 teaspoon baking soda 1/2 teaspoon salt

  • Preheat the oven to 325 F.  Grease an 8” x 8” square pan with butter and coat with cocoa powder.
  • In a medium saucepan melt the butter, sugar, water, and instant coffee.  When melted add in 1 1/2 cup chocolate chips and stir until combined and melted.  Add in the eggs and vanilla one at a time and stir to combine.  Add in the flour, soda, and salt mixing until just combined.  Stir in the remaining chocolate chips.
  • Pour the brownie batter into the prepared pan and bake for 20-25 minutes until the top is shiny and crusty and a toothpick comes out almost clean.  DO NOT OVER BAKE!
  • Let cool slightly and then slice and serve!
